As a layman, I was wondering if anyone could recommend an organization that helps support and encourage seminarians and/or men considering a vocation. Thanks!

The knights of Columbus (as has been mentioned) are good, and we seminarians really appreciate them.
You might also check out the Serra Club. They are dedicated to supporting vocations. Frankly, I don't know what they do as I have had no contact with them over the past 18 months that I have been either a candidate or a seminarian, but maybe...
Also, contact your diocesan vocations director as they can give you concrete ways to support seminarians. I love getting notes/letters from random people in the diocese telling me that they are praying for me. I always return the favor. Also, if you have a seminarian at your parish, invite them over for supper. Give them a gift certificate to some place like Walmart. It doesn't have to be much, but we still have to buy toothpaste, and socks and stuff!
