There is a listing on the Institute for Religious Life website of religious orders sponsoring retreats.

Also, the Benedictines at St. Emma's (Pennsylvania) will have a monastic live-in from July 19-22.

retreats within religious orders are generally during the school yr and not during the summer. So it would be rather hard to find a summer retreat at a religious community. The orders consider this as "down" time for them and just enough time for the members of the order to return to main house and enjoy eachother's company.
