I had a good cooking weekend myself. I like to experiment in the kitchen, and a couple of my friends have been willing guinea pigs on a several occasions.

Whoa. Read that too fast and thought you said you made guinea pigs. I was about to have a chat with you :lol:

i made coffee cake yesterday and spaghetti today. Everything else I attempt to make i mess up on :( , I'm better at the eating part.

Once you get a few things that you're really good at cooking (I almost typed God at cooking lol) its easier to move on and try new things. Our stand-bys are chilli, chicken alfredo, and a couple other things, but when I ask Matt what he wants for dinner it is often one of those 2 because he likes it so much. He's very easy to please so long as the dish is relatively veggie free, and doesn't have onions. lol To me thats boring, I want to try other things.

I remember the first thing my mom ever had me cook on my own was summer squash and zuchinni, sliced, and cooked in butter, with a dash of salt and pepper. I thought it looked so gross. lol We were homeschooled, and she called it "Home Ec" but I think it really meant "You get to cook dinner tonight."

I had very similar experiences when I was homeschooled in sixth grade. We also got the famous "we don't need to buy a dishwasher -- we have four already (kids, that is)." Parents think they're so funny ...

Hey that blackened chicken dish sounds great. Can you post the recipe or would you have to kill me after telling me?

I love cooking, mostly Italian food though, i swear I should bottle my sauce. But I wanna make other things too.

Well, I guess you could twist my arm into telling... ;)

Kilroy, if you try making it, its good but probably not quite to par with Hobbit. You'll still want to go there for the original. ;)

On a plate arrange about 1/2 a bag of tortilla chips (flour or corn, your preferance), top with 1 can black beans (or you can cook them yourself from dried beans)

On stove top cook and season about 2 chicken breasts (I made it blackened but you can make the chicken however you prefer), when totally cooked slice and arrange on top of beans and chips. Top with cheddar and monterey jack cheeses. If you like jalapenos you can put a few thin slices of the pepper on top of the coagulated milk prior to melting. Pop into microwave or oven and heat until coagulated milk is melted. Serve with guacamole, sour cream and pico de gallo.

To blacken the chicken: Use blackening seasoning or cajun seasoning and coat the chicken pretty generously. Put a little bit of olive oil in a fry pan, and cook the chicken completely on a med-hi or hi setting. You'll want to keep the fan on or a window open because this does smoke a bit during cooking (its supposed to). Essentially what you want to achieve is nice tender fully cooked chicken breasts with the seasoning on the outside carmelized and blackened. The meat doesn't burn, but the seasonings turn black.

Guacamole--1 or 2 avacados, mashed

1 or 2 cloves of garlic, crushed or garlic powder to taste

lemon or lime juice

a couple teaspoons of chopped tomato

cilantro

I just mix these ingredients, varying the ammounts, until I think it tastes right. Some people also add a little bit of onion.

Pico de gallo--this is essentially homemade salsa

2 roma tomatoes (thats what I used tonight but I don't think it really matters what kind you use as long as you're happy with the result)

about 1/2 an onion, chopped FINELY

cilantro

lime juice

1 small jalapeno chopped FINELY

I made black bean nachos with blackened chicken. Those of you in Houston, if you've gone to the Hobbit thats one of the dishes they serve, so if you haven't tried it I suggest you do one of these days because its awesome! When I made it tonight I figured I'd end up with a cheap Hobbit-dish-imitation, but this came out sooo good it was like I was sitting there eating it in the restaraunt.
