What would you say to an agnostic who believes that there is one universal truth, and that is that all humans are motivated by self-interest?

I would tell your agnostic friend that he/she is very observant. In man's broken, sinful state, which leans towards consupiscence, the reality is that humanity is motivated by self interest. In fact, it leads to very a compelling arguement for the need for a savior.

Jesus Christ, in the great act of kenosis (pouring out of himself), has turned the world upside down and given us the grace to move away from the motivation to seek one's own interests. Through the power of Jesus Christ, we too, can pour out of ourselves with a pure motivation, one that denies self to find it. It is a motivation that is based solely on deep unitive love between man and God.

In brief, Jesus came to save us from the one thing your friend sees prevelant in humanity. They need to seek the other side of humanity by reading the lives of the saints.

Peace,
