Being a church choir geek, I'll have to say my favorites are the basics, We Are Called, Here I am Lord, Lead Me Lord, Blest are They, and Servant Song. Don't know if anyone else knows them but they're pretty amesome.

It reminds me of a mix of Byzantine mass and Roman chant. And I love the French :D
