Yogurt is not.

With milk powder, water, and plain yoghurt. You make the milk extra strong (maybe twice the strength, can't remember). Then, the way we do it is heat it in the microwave until really warm but not hot, put in a couple of tablespoons of plain yoghurt (with active bacteria), mix it thoroughly and put it in a glass jar in a styrofoam container the right size (for insulation). If you don't have one the right size, you can do as my grandmother did and put it in a larger container of hot water, perhaps in an unused oven. The container needs to be glass (according to everything I've heard), and I've found that it's usually done in 24 hours. If it's still runny, either the yoghurt didn't have active bacteria, it wasn't warm enough (and didn't have enough time/heat to yog), or the milk wasn't strong enough. To tell, smell it. If it smells like milk, the problem's with the yoghurt you put in. If it has little stringy things, the temperature and time was just fine (or even perhaps a little too long, if they're tough), but there wasn't enough milk powder to make it solid. If it has a smooth, creamy, consistent texture but is too runny, let it sit for a bit longer, and heat it up if it needs it.

(In the Northwest, now, though, right?)

Does it work in reverse? Can you substitute sour cream for yogurt? Like frozen sour cream (TCBSC?) or sour cream with fruit on the bottom? Or smoothies with sour cream in them?

That just sounds sick.

Although you can use sour cream in some baked goods. I have a coffee cake recipe that calls for sour cream and it makes it very moist and delicious.

I LOVE sour cream cake!

i like fat free sour cream... although I always wonder how they make it fat free. I mean, "fat free" and "cream" don't usually go in the same phrase. i certainly wouldn't drink any of that "fat free half and half" nonsense. but for some reason it tastes good, and if i figured out how they make it fat free then i probably wouldn't eat it anymore and i would have to switch to yogurt... ignorance is bliss!

I accidentally bought some fat-free half-n-half. It's disgusting. Once you take the fat out of cream, what do you have left? Nothing good, let me tell you.
