I like to just mix powdered sugar and milk until it's a good thiickness. but that usually works best on cookies

My mom was baking cookies one time and had a huge bowl full of butter. My brother thought it was pudding and took a whole spoon full and ate it. I :lol_roll:

The best chocolate frosting:
Container whipping cream (not the really small one)
4 c good quality chocolate chips

Heat the whipping cream until just before boiling (it can make small bubbles and be heaving about, but DO NOT let it boil).
Remove from heat
Pour in the chocolate chips and stir well, making sure to mix in the chocolate melted to the bottom.
Pour into a container and cool in the fridge for four hours.
Whip until it's a good frosting consistency.

You can certainly refrigerate it again, but it will get hard, so you'll have to beat it with a fork before you use it again.
Similarly, you can freeze it, but you'll have to re-whip it after it thaws (you shouldn't need to pull out the mixer, though: a fork is usually enough, but it will take some time).

Alternately, you can make little balls and roll them in cocoa. Mmmm... Chocolate truffles
